RESUMO Investigações sobre as etapas de armazenamento e secagem na pós-colheita de frutos de macaúba (Acrocomia aculeata (Jacq.) Lodd. Mart) ainda são incipientes. Desta forma, objetivou-se estudar o efeito da secagem na qualidade do óleo de amêndoas de macaúba durante o armazenamento. A secagem foi realizada em três condições de ar: 40; 50 e 60 ºC. Foram utilizadas quatro repetições para cada temperatura. Após a secagem, as amêndoas foram armazenadas durante 0; 60; 120; 240 e 360 dias, e em cada período, foram realizadas as seguintes análises físico-químicas: teor de óleo da amêndoa; índice de acidez; estabilidade oxidativa; atividade de água e cor do óleo. O aumento no período de armazenamento ocasionou elevação no índice de acidez e redução na estabilidade oxidativa do óleo para todos os tratamentos. Os valores médios de atividade de água no óleo variaram de 0.56 - 0.68. Os valores médios das coordenadas L* e b*, não diferiram do controle, com exceção dos períodos de armazenamento de 0 e 60 dias. Com relação à coordenada a*, houve diferença entre os processos de secagem, quando comparados ao controle. Não foram observadas diferenças significativas para o teor de óleo. Conclui-se que a secagem pode ser tornar ferramenta eficiente no controle da qualidade do óleo de amêndoa ao longo do armazenamento.

ABSTRACT Studies of post-harvest storage and drying in macauba fruit (Acrocomia aculeata (Jacq.) Lodd. Mart) are still in the early stages. The aim of this work was to investigate the effect of drying on the quality of macauba kernel oil during storage. Drying was carried out under three different air temperatures: 40°C, 50°C and 60°C. Four replications were used for each temperature. After drying, the kernels were stored for 0, 60, 120, 240 and 360 days, and the following physico-chemical analyses were carried out for each period: kernel oil content, acidity index, oxidative stability, water activity and oil colour. An increase in storage time resulted in an increase in the acidity index and a reduction in the oxidative stability of the oil in all treatments. The mean value for water activity in the oil ranged from 0.56 to 0.68. The mean values of the L* and b* coordinates did not differ from the control, except for the storage times of 0 and 60 days. There was a difference in the a* coordinate between the drying processes when compared to the control. No significant differences were seen for oil content. It was concluded that drying can be efficient tool in controlling the quality of kernel oil during storage.

ABSTRACT. Knowledge of the relationship between the equilibrium moisture content of the product and the air that involves it is essential to guarantee product quality and preserve its characteristics during storage. This trend can be studied by sorption isotherms. Thus, this study aimed to obtain desorption and adsorption isotherms of soybean grains to determine the mathematical model that best fits the experimental data and analyze the hysteresis phenomenon. Soybean grains with a moisture content of 21.95% (db) were used to verify the desorption process. The grains were dried until 3.50% (db) for the adsorption process. The static-gravimetric method was employed to determine the equilibrium moisture content of the grain at different temperatures (10, 20, 30, 40, and 50°C) and relative humidity levels (0.10 to 0.92%). Eight mathematical models were fitted to the experimental data. The modified Halsey model satisfactorily represented the desorption and adsorption phenomena of soybean grains. The equilibrium moisture content of soybean grains increased along with an increment in water activity. The increase in temperature led to a reduction in the equilibrium moisture content of soybean grains at a constant water activity. The equilibrium moisture content values obtained by desorption are higher than those obtained by adsorption, indicating the hysteresis phenomenon at the studied temperature range. The isotherms obtained for the desorption and adsorption process were classified as type III because of the high oil content in soybean grains.

RESUMO O estudo da cinética de secagem é fundamental para a correta escolha do tempo e da temperatura utilizadas no processo. Além disso, a modelagem matemática possibilita a simulação, a otimização, o dimensionamento e a determinação da aplicação comercial do sistema de secagem. Diante do exposto, objetivou-se investigar a cinética e a modelagem matemática da secagem de amêndoas de macaúba [Acrocomia aculeata (Jacq.) Lodd. ex Mart] em diferentes temperaturas. A secagem foi realizada em três temperaturas: 40 °C, 50 °C, e 60 °C. Foram utilizadas quatro repetições para cada temperatura. Os dados experimentais se ajustaram em nove diferentes modelos matemáticos. A escolha do melhor modelo baseou-se nos seguintes parâmetros estatísticos: magnitude do coeficiente de determinação ajustado, magnitude do erro médio relativo e erro padrão da estimativa. O incremento da temperatura de secagem resultou na redução no tempo de secagem. O menor tempo de secagem foi observado no tratamento com temperatura de 60 °C, onde as amêndoas desse tratamento atingiram o teor de água de equilíbrio em 34,08 h. Já o maior tempo de secagem foi observado no tratamento 40 °C, com as amêndoas atingindo a umidade de equilíbrio em 404,40 h. Os modelos de Aproximação de Difusão, Midilli, Page e Page Modificado foram os mais adequados para descrever o fenômeno de secagem de amêndoas de macaúba, e subsidiar o dimensionamento de secadores industriais.

ABSTRACT The study of drying kinetics is fundamental for making the correct choice of time and temperature to be used in the drying process. In addition, mathematical modeling enables the simulation, optimization, sizing, and determination of the commercial application of the drying system. Therefore, the objective of this study was to investigate the kinetics and mathematical modeling of the drying process of macaúba almond [Acrocomia aculeata (Jacq.) Lodd. ex Mart] performed at different temperatures. For this purpose, the drying was performed under three different temperatures: 40 °C, 50 °C, and 60 °C. Four repetitions were performed for each temperature. The experimental data were fitted by nine different mathematical models. The choice of the best model was based on the following statistical parameters: magnitude of the adjusted coefficient of determination, magnitude of the mean relative error, and standard error of the estimate. It was observed that an increase in the drying temperature resulted in a reduction of drying time. The shortest drying time was observed in the treatment performed under 60 °C in which the almonds attained equilibrium moisture content at 34.08 h. The longest drying time was observed in the treatment performed under 40 °C, with the almonds attaining equilibrium moisture content at 404.40 h. Approximation of Diffusion, Midilli, Page, and Modified Page were the models that best described the drying process of macaúba almonds with the aim of subsidizing the design of industrial dryers.

Resumo A escoabilidade dos produtos agrícolas é importante fator a ser considerado na pós-colheita, impactando diretamente no número de operações e no dimensionamento de maquinários. Assim, objetivou-se avaliar e determinar o coeficiente K e as propriedades de fluxo de grãos de café em função de diferentes níveis de torra, granulometria, temperatura e tempo de armazenamento. Grãos de café foram torrados nos níveis média clara e moderadamente escura, e depois moídos nas granulometrias fina, média e grossa. Um lote adicional de grãos de café não foi moído. As amostras foram armazenadas a 10 °C e 30 °C e analisadas durante o armazenamento (0, 30, 60, 120 e 180 dias) em relação aos parâmetros: coeficientes interno e externo de atrito, ângulo de atrito interno, ângulo de atrito interno efetivo, ângulo de atrito com a parede (concreto, aço e madeira) e o coeficiente de pressão lateral (coeficiente K). O ângulo de atrito interno variou significativamente com a granulometria e o nível de torra. A torra moderadamente escura e a granulometria fina obtiveram maiores valores (ao redor de 29,5 °) de ângulo de atrito com a parede. Quanto ao material em que as amostras foram colocadas, a madeira foi o material no qual as amostras apresentaram os maiores valores de ângulo de atrito com a parede, seguidas pelas amostras colocadas no concreto e no aço, quando comparadas na mesma temperatura de armazenamento, no mesmo nível de torra e na mesma granulometria. Os grãos de café inteiros foram classificados como de fluxo livre. A granulometria fina levou a um fluxo coesivo, de acordo com a função fluxo. Café torrado em média clara, inteiro, requer estruturas de armazenagem que suportem maior pressão, de acordo com os valores do coeficiente K.

Abstract Flowability of agricultural products is an important factor to be considered at post-harvest, thus impacting directly on number of operations and the design of machinery. This study aimed to evaluate and determine the K coefficient and flow properties as a function of different levels of roasting, grain size, temperature and storage. Coffee beans were roasted at medium light and moderately dark, then ground at fine, medium and coarse sizes. An additional coffee lot was not ground. Samples were stored at 10 ºC and 30 ºC and analyzed during storage (0, 30, 60, 120 and 180 days), regarding internal and external friction coefficients, angle of internal friction, effective angle of internal friction, wall friction angle (concrete, rough steel and wood) and lateral pressure coefficient (K coefficient). Angle of internal friction varied significantly due to particle size and roast degree. Moderately dark roast with fine particle size led to higher values (about 29.5 º) of wall friction angle. The wood sample was the material with the highest values of wall friction angle, followed by the concrete and steel samples, when compared at the same storage temperature, roast degree and particle size. Whole coffee was classified as free-flowing. Fine particle size leads to cohesive flow characteristic, according to the flow function. Coffee roasted at medium light, kept whole requires storage facilities with higher pressure support, accordingly to the K coefficient values.

ABSTRACT This study aimed to fit mathematical models to whey foam drying processes in different air temperature conditions, to determine the effective diffusion coefficient and to obtain the activation energy. For foam formation, 5.0% Emustab® was added to the serum in mass and subjected to stirring in a domestic shaker for 15 min. After, it was spread onto trays to form a thin layer of about 1 cm in which the drying conditions were: 40, 45, 50, 55 and 60 °C, 5.6 m s-1 and 60%. The Logarithm and Midilli models describe the kinetics of serum foam drying; the effective diffusion coefficient increased with the elevation of drying temperature and activation energy of 50.84 kJ mol-1.

RESUMO Estudos sobre as propriedades termodinâmicas de sementes de azevém são necessários para melhorar os processos pós-colheita, relacionando os fatores que afetam a qualidade do produto com a interação entre a água e seus componentes químicos. Dada a importância de reconhecer e entender o comportamento intrínseco da água em sementes de azevém e fornecer dados para a melhoria de equipamentos de secagem industriais, este trabalho teve como objetivo calcular e avaliar as propriedades termodinâmicas da dessorção de água de sementes de azevém em função do teor de água de equilíbrio. Utilizou-se sementes de azevém com teor de água inicial de 10,4 (% b.s.). O teor de água de equilíbrio das sementes foi determinado pelo método estático-gravimétrico, para diferentes valores de temperatura (10, 20, 30, 40 e 50 °C) e atividade de água (entre 0,10 e 0,90), em três repetições. O modelo Chung Pfost foi o que apresentou o melhor ajuste aos dados experimentais. Observou-se que o calor isostérico integral de dessorção aumentou à medida que o teor de água de equilíbrio diminuiu, variando de 2499,95 a 4241,96 kJ kg-1 na faixa de teor de água entre 2,80 a 22,10 (% b.s.). A entropia diferencial também aumentou com a diminuição do teor de água em equilíbrio, assim como a energia livre de Gibbs, sendo positiva para todas as temperaturas estudadas, indicando que a dessorção de sementes de azevém é um processo não espontâneo. A teoria da compensação entalpia-entropia foi satisfatoriamente aplicada ao fenômeno de sorção de água, sendo controlado pela entalpia.

ABSTRACT Studies about the thermodynamic properties of ryegrass seeds are necessary to improve post-harvest processes, relating the factors that affect product quality with the interaction between water and its chemical components. Given the importance of recognizing and understanding the intrinsic behavior of water in ryegrass seeds and providing data for the improvement of industrial drying equipment, this work aimed to calculate and evaluate the thermodynamic properties of moisture desorption of ryegrass seeds as a function of the equilibrium moisture content. Ryegrass seeds with initial moisture content of 10.4 (% d.b.) was used. The equilibrium moisture content of seeds was determined by static-gravimetric method at different temperatures (10, 20, 30, 40, and 50 °C) and water activity values (between 0.10 and 0.90), in three repetitions. The Chung Pfost model presented the best fit to the experimental data. It was observed that the integral isosteric desorption heat increased as the equilibrium moisture content decreased, ranged from 2499.95 to 4241.96 kJ kg-1 in the moisture content range 2.80 to 22.10 (% d.b.). Differential entropy also increased with decreasing equilibrium moisture content, as did Gibbs free energy, being positive for all temperature studied, indicating that ryegrass seeds desorption is a non-spontaneous process. The enthalpy-entropy compensation theory was satisfactorily applied to the sorption phenomenon, being controlled by enthalpy.

RESUMO A fim de desenvolver sistemas adequados de armazenamento e secagem, é necessário determinar as isotermas de sorção das sementes. A composição química do produto influencia o processo de sorção; produtos com alto teor de óleo absorvem menor quantidade de umidade do ambiente, quando comparados a produtos com alto teor de carboidratos. Devido à importância de compreender a higroscopicidade de diferentes produtos agrícolas, este trabalho teve como objetivo determinar, modelar e avaliar a diferença entre as isotermas de dessorção de sementes de azevém e linhaça, em diferentes condições de temperatura e umidade relativa. Utilizaram-se sementes de azevém e linhaça com teor de água inicial de 10,4 e 8,7% (bs), respectivamente. O teor de água de equilíbrio das sementes foi determinado pelo método estático-gravimétrico em diferentes valores de temperatura (10, 20, 30, 40, e 50 ± 1 ºC) e umidade relativa (entre 11 a 96 ± 2%), em três repetições. Sete modelos matemáticos foram ajustados aos dados experimentais do teor de água de equilíbrio das sementes. O modelo Chung Pfost foi o que melhor se ajustou aos dados experimentais das sementes de azevém, enquanto o modelo Smith foi escolhido para as sementes de linhaça. O teor de água de equilíbrio das sementes diminuiu à medida que a temperatura aumentou, para um valor constante de atividade de água. As isotermas de dessorção de sementes de azevém (Tipo II) e de linhaça (Tipo III) são diferentes, de acordo com a classificação de Brunauer, devido à composição dos produtos (teor de amido e óleo).

ABSTRACT It is necessary to determine the sorption isotherms of seeds to develop adequate systems of storage and drying. The chemical composition of a product affects the sorption process; products with a high oil content adsorb a lower amount of moisture from the environment than products with a high carbohydrate content. Given the importance of the hygroscopicity of different agricultural products, this work aimed to determine, model and evaluate the difference between desorption isotherms of ryegrass and flax seeds grown at different temperature and relative humidity conditions. Ryegrass and flax seeds, which contained initial moisture contents of 10.4 and 8.7% (db), respectively, were used. The equilibrium moisture content of the seeds was determined using a static-gravimetric method at different temperatures (10, 20, 30, 40, and 50 ± 1 °C) and relative humidity values (between 11 and 96 ± 2%), in three replicates. Seven mathematical models were adjusted to the equilibrium moisture content experimental data of the seeds. The Chung Pfost model best fit the experimental data of ryegrass seeds, whereas the Smith model was determined to be the best fit for flax seeds. The equilibrium moisture content of the seeds was found to decrease as the temperature increased when the value of water activity was constant. The desorption isotherms of ryegrass seeds (Type II) and flax seeds (Type III) are different, according to Brunauer’s classification, which is caused by the composition (starch and oil content) of each product.

RESUMO Objetivou-se modelar e determinar as propriedades termodinâmicas de sorção de água em pó de graviola. As isotermas foram determinadas pelo método estático nas temperaturas de 10; 20; 30; 40 e 50 °C e atividade de água entre 0,113 a 0,868 (decimal). O modelo de GAB descreveu bem o fenômeno de sorção de água do pó de graviola. O teor de água da monocamada variou de 12,589 a 9,109% b.s. Os valores de entalpia relacionados ao modelo de GAB foram negativos, com valor de -2581,035 kJ kg-1 para C0 e -107,758 kJ kg-1 para K0. O calor isostérico de sorção, a entropia e a energia livre de Gibbs apresentaram alta correlação com o teor de água de equilíbrio e a correlação entalpia e entropia se confirmou para a sorção de água em pó de graviola.

ABSTRACT The aim of this study was to model and determine the thermodynamic properties of moisture sorption in soursop fruit powder. The isotherms were determined by the static method at temperatures of 10, 20, 30, 40 and 50 °C, and a water activity of between 0.113 and 0.868 (decimal). The GAB model effectively described the moisture sorption phenomenon of soursop powder. The monolayer moisture content ranged from 12.589 to 9.109% db. The enthalpy values related to the GAB model were negative, with -2581.035 kJ kg-1 for C0 and -107,758 kJ kg-1 for K0. The isosteric heat of sorption, entropy and Gibbs free energy had a high correlation with the equilibrium moisture content, and the correlation between enthalpy and entropy was confirmed for moisture sorption in soursop powder.

RESUMO: Objetivou-se com este trabalho determinar as propriedades mecânicas de grãos de feijão cultivar BRSMG Majestoso revestidos com cera de carnaúba. Foram utilizados grãos com teor de água de aproximadamente 0,1481 decimal b.s. (base seca), tratados com solução de cera de carnaúba. Parte destes destinou-se à amostra testemunha, uma a aplicação de cera diluída na proporção de 1/1 (solução de cera de carnaúba/água) e outra a aplicação apenas de solução de cera de carnaúba, tratamentos 0, 1 e 2, respectivamente. Foram realizados ensaios de compressão uniaxiais no aparelho universal de testes, TA. HD Texture Analyser, com célula de carga de 500 N. Os testes de compressão foram realizados ao longo do período de armazenamento nos grãos in natura, naqueles que passaram pelo processo de hidratação nas temperaturas de 40 e 50 °C e em grãos ao longo do processo de cocção. Apenas o tempo de armazenamento teve um efeito significativo (P<0,05) sobre a força de ruptura e o módulo proporcional de deformidade. A hidratação e a cocção dos grãos proporcionaram redução nos valores das variáveis estudadas.

ABSTRACT: The objective of this research was to determine the mechanical properties of beans (BRSMG Majestuoso) coated with carnauba wax solution. Grains with 0.1481 (d.b.) moisture content was used. Treatments 0, 1 and 2 were respectively defined as the control sample, application of the wax diluted 1/1 (carnauba wax solution/water) and application of carnauba wax without dilution. Uniaxial compression tests were performed in the universal test apparatus, TA HD Texture Analyzer with 500 N load cell. Compression tests were carried out during the storage period of in-nature grains, in those that underwent the hydration process at 40 and 50 °C of temperature and in grains during the cooking process. Only the storage time had a significant effect (P<0.05) on the rupture force and the proportional deformity module. Hydration and cooking of the grains provided a reduction in the values of the studied variables.

RESUMO A desidratação de produtos vegetais prolonga sua vida útil e reduz sua massa e volume, o que aumenta a eficiência de transporte e armazenamento e agrega valor aos alimentos. No entanto, é um processo intensivo em energia e tempo, tornando necessária a busca por tecnologias mais eficientes. Diante do exposto, objetivou-se investigar o processo de desidratação de gengibre por infravermelho através da aproximação do período constante de desidratação à teoria do processo de transferência de calor e de massa para o termômetro de bulbo molhado, e do período decrescente de desidratação à teoria de difusão liquida. Foram utilizadas fatias de 5,0 mm de espessura e 2,0 cm de diâmetro para serem secas em um secador com fonte de irradiação infravermelha nas temperaturas de 50, 60, 70, 80, 90 e 100 °C, até massa constante. Os coeficientes de transferência de calor e de massa, e o coeficiente de difusão efetivo, aumentaram linearmente com o aumento da temperatura, obtendo-se valores que variaram respectivamente de 69,40 a 92,23 W m-2 °C-1, 0,062 a 0,089 m s-1 e 3,81 x 10-9 a 1,13 x 10-8 m2 s-1. A variação dos coeficientes de transferência de calor e de massa foi descrita por um modelo linear e a variação do coeficiente de difusão efetivo com a temperatura foi descrita por meio da relação de Arrhenius, cuja energia de ativação foi de 22,07 kJ mol-1. O modelo de Henderson e Pabis modificado foi capaz de descrever satisfatoriamente o período de taxa de secagem decrescente.

ABSTRACT Dehydration of plant products extends its shelf life and reduces its mass and volume, which increases transport and storage efficiency and adds value to food. However, it is an intensive process in energy and time, making necessary the search for more efficient technologies, Thus, this study aimed to investigate the infrared ginger dehydration process by approaching the constant period of dehydration to the theory of mass and heat transfer process to the wet bulb thermometer and the decreasing period of dehydration to liquid diffusion theory. We submitted 5.0 mm thickness and 2.0 cm diameter slices to a dryer with infrared radiation at 50, 60, 70, 80, 90 and 100 °C until constant mass. Heat and mass transfer coefficients, and effective diffusion coefficient increased linearly with temperature increasing, resulting in values ranging from 69.40 to 92.23 W m-2 °C-1, 0.062 to 0.089 m s-1 and 3.81 x 10-9 to 1.13 x 10-8 m2 s-1. Variation of heat and mass transfer coefficients was described by a linear model and the variation of effective diffusion coefficient with the temperature was described with the Arrhenius relation, whose activation energy was 22.07 kJ mol-1. The modified Henderson and Pabis model was able to satisfactorily describe the period of decreasing drying rate.

RESUMO: Neste trabalho objetivou-se verificar a influência do teor de água nos valores da força máxima de compressão, módulo proporcional de deformidade, coeficientes elásticos d, e, f, além dos valores da tangente e secante máximas nos grãos de crambe (Crambe abyssinica Hochst), submetidos à compressão na posição natural de repouso. Os grãos de crambe, utilizados com teores de água entre 0,1547 e 0,0482 (decimal b.s.), foram secos nas temperaturas de 40°C e comprimidos uniaxialmente entre duas placas paralelas, na posição natural de repouso, cuja redução do teor de água ao longo da secagem foi acompanhada pelo método gravimétrico (perda de massa). A força de compressão necessária para deformar os grãos de crambe diminui com o aumento do teor de água. O módulo proporcional de deformidade aumenta com a redução da deformação, obtendo-se valores entre 0,09 e 0,27 (x 102MPa), em que o modelo sigmoidal, descrito por meio da série de Taylor, representa adequadamente a resistência dos grãos de crambe à compressão na posição natural de repouso, para os teores de água menores que 0,0813 (b.s.)

ABSTRACT: This study aimed to verify the influence of moisture content on the values of maximum compressive strength, proportional deformity modulus, elastic coefficients d, e, and f beyond the tangent values, and maximum grain drying of crambe (Crambe abyssinica Hochst) under compression in natural resting position. Crambe grains with moisture contents ranging from 0.1547 to 0.0482 decimal db were dried at 40°C and uniaxially compressed between two parallel plates in the natural rest position. The gravimetric method was used to monitor reduction in moisture content during drying (weight loss). It was concluded that the compression force required to deform the crambe grains decreases as the moisture content increases. The proportional deformity modulus increases as the deformation decreases, yielding values between (0.09-0.27)×102MPa. Sigmoidal model described by Taylor series adequately represents the compression resistance of crambe grains in the natural rest position with moisture content lower than 0.0813db.

RESUMO Banana é uma das frutas mais consumidas no mundo, sendo grande parte de sua produção realizada em países tropicais. Este produto possui uma grande variedade de vitaminas e minerais, sendo um importante componente da alimentação no mundo. Entretanto, a vida de prateleira da banana é curta, requerendo, portanto, procedimentos de modo a prevenir a perda de qualidade e aumentar sua vida de prateleira. Um desses procedimentos é a secagem. Este trabalho objetivou estudar o processo de secagem de fatias de banana (Cv. Prata) por infravermelho e determinar os coeficientes de transferência de calor e massa desse processo. Em adição, foram obtidos o coeficiente de difusão efetivo e a relação entre os estádios de maturação de bananas e a secagem. Fatias de banana em quatro diferentes estádios de maturação foram secadas usando um secador com fonte de calor por infravermelho em quatro temperaturas distintas (65, 75, 85 e 95 ºC). O modelo de Midilli foi o que melhor representou a secagem por infravermelho das fatias de banana. Os coeficientes de transferência de calor e massa variaram, respectivamente, entre 46,84 e 70,54 W m-2 K-1 e 0,040 a 0,0632 m s-1 para a faixa de temperatura, em diferentes estádios de maturação. O coeficiente de difusão efetivo variou entre 1,96 a 3,59×10-15 m² s-1. As energias de ativação encontradas foram de 16,392; 29,531; 23,194 e 25,206 kJ mol-1 para o 2º, 3º, 5º e 7º estádio de maturação, respectivamente. Os estágios de maturação não afetaram a secagem por infravermelho de bananas.

ABSTRACT Banana is one of the most consumed fruits in the world, having a large part of its production performed in tropical countries. This product possesses a wide range of vitamins and minerals, being an important component of the alimentation worldwide. However, the shelf life of bananas is short, thus requiring procedures to prevent the quality loss and increase the shelf life. One of these procedures widely used is drying. This work aimed to study the infrared drying process of banana slices (cv. Prata) and determine the heat and mass transfer coefficients of this process. In addition, effective diffusion coefficient and relationship between ripening stages of banana and drying were obtained. Banana slices at four different ripening stages were dried using a dryer with infrared heating source with four different temperatures (65, 75, 85, and 95 ºC). Midilli model was the one that best represented infrared drying of banana slices. Heat and mass transfer coefficients varied, respectively, between 46.84 and 70.54 W m-2 K-1 and 0.040 to 0.0632 m s-1 for temperature range, at the different ripening stages. Effective diffusion coefficient ranged from 1.96 to 3.59 × 10-15 m² s-1. Activation energy encountered were 16.392, 29.531, 23.194, and 25.206 kJ mol-1 for 2nd, 3rd, 5th, and 7th ripening stages, respectively. Ripening stages did not affect the infrared drying of bananas.

RESUMO. Objetivou-se com este trabalho modelar a cinética de sorção de água pelo café torrado e moído. Foram utilizados grãos de café arábica com teor de água inicial de 0,1234 kga kgms -1, torrados no ponto de torra médio (SCCA # 55), tendo sido estabelecido três níveis granulométricos: grossa (1,19 mm), média (0,84 mm) e fina (0,59 mm). Para a obtenção das isotermas de sorção da água e do calor isostérico, foram analisadas diferentes condições de temperatura e umidade relativa: usando o método dinâmico, 25ºC (0,50; 0,60; 0,70 e 0,80 de UR) e 30°C (0,30; 0,40; 0,50; 0,60; 0,70 e 0,80 de UR); e o método estático, 25ºC (0,332 e 0,438 de UR). Os dados de teor de água no equilíbrio foram correlacionados com modelos matemáticos. O modelo de GAB foi o que melhor representou o equilíbrio higroscópico para a sorção do café torrado nos diferentes níveis granulométricos. O calor isostérico de sorção na granulometria fina aumentou com a elevação do teor de água de equilíbrio indicando forte grau de ligação entre as moléculas de água e o produto. A energia livre de Gibbs diminuiu com o aumento do teor de água de equilíbrio e com a temperatura.

ABSTRACT. The objective of this study was to model the kinetics of water sorption in roasted and ground coffee. Crude Arabica coffee beans with an initial moisture content of 0.1234 kgwkgdm -1 were used. These beans were roasted to a medium roast level (SCCA # 55) and ground at three particle sizes: coarse (1.19 mm), medium (0.84 mm) and fine (0.59 mm). To obtain the water sorption isotherms and the isosteric heat, different conditions of temperature and relative humidity were analyzed using the dynamic method at 25ºC (0.50, 0.60, 0.70, and 0.80 of RH) and 30°C (0.30, 0.40, 0.50, 0.60, 0.70, and 0.80 of RH) and using the static method at 25ºC (0.332 and 0.438 of RH). The GAB model best represented the hygroscopic equilibrium of roasted coffee at every particle size. Isosteric heat of sorption for the fine particle size increased with increments of equilibrium moisture content, indicating a strong bond energy between water molecules and the product components. The Gibbs free energy decreased with the increase in equilibrium moisture content and with temperature.

RESUMO Este trabalho teve por objetivo ajustar modelos matemáticos aos dados experimentais da secagem dos frutos de amendoim em camada delgada, submetidos a diferentes temperaturas do ar de secagem. Foram utilizados frutos de amendoim da cultivar IAC 505. Os frutos de amendoim foram submetidos à secagem em estufa de ventilação forçada com diferentes níveis de temperatura (40; 50; 60 e 70 ºC). Aos dados experimentais foram ajustados dez modelos matemáticos tradicionalmente utilizados para representação da cinética de secagem em camada delgada. Baseado nos resultados encontrados, conclui-se que dentre os modelos ajustados aos dados experimentais, o modelo de Page foi o escolhido para representar o fenômeno de secagem em camada delgada dos frutos de amendoim. O coeficiente de difusão efetivo aumenta com a elevação da temperatura, e a sua relação com a temperatura de secagem pode ser descrita pela equação de Arrhenius. As propriedades termodinâmicas entalpia e entropia tiveram seus valores reduzidos com aumento da temperatura do ar de secagem, enquanto que os valores da energia livre de Gibbs aumentam com o aumento da temperatura.

ABSTRACT The aim of this study was to fit mathematical models to the experimental data from the thin-layer drying of peanut fruit subjected to different drying-air temperatures. Peanut fruit from the IAC 505 cultivar were used. The peanut fruit were subjected to drying in a forced ventilation oven at different temperature levels (40, 50, 60 and 70 ºC). Ten mathematical models, traditionally used to represent the kinetics of thin-layer drying, were fit to the experimental data. Based on the results, it can be concluded that among the models adjusted to the experimental data, the Page model was chosen to represent the phenomenon of thin-layer drying in peanut fruit. The effective diffusion coefficient increases with the rise in temperature, and its relation to the drying temperature can be described by the Arrhenius equation. The values for the thermodynamic properties, enthalpy and entropy, were reduced with the increasing temperature of the drying air, while the values for Gibbs free energy increased with the increase in temperature.

RESUMO As propriedades texturais dos produtos minimamente processados indicam a sua qualidade, sendo a embalagem fundamental para manter a conservação destes alimentos. Objetivou-se com este trabalho avaliar as alterações de textura que ocorrem durante o armazenamento das batatas baroa minimamente processadas através da análise do perfil de textura (TPA) e relaxação, em função de 4 tipos de embalagens plásticas, combinadas à refrigeração. As batatas baroa foram selecionadas, lavadas, sanitizadas, descascadas e cortadas em rodelas. O processamento prosseguiu com sanitização final, enxágue e imersão em solução de ácido ascórbico e ácido cítrico. As rodelas foram centrifugadas e acondicionadas em bandejas de poliestireno expandido revestidas com filme de PVC e em sacos de polietileno de alta densidade (PEAD), de polipropileno (PP) e de poliolefina multicamadas para vácuo e foram mantidas a 5 ± 2 ºC e 90 ± 5% de umidade relativa, durante 12 dias. Para o TPA, os parâmetros de interesse foram dureza e adesividade, calculados a partir das curvas de força (N) x tempo (s). Para a modelagem da relaxação utilizou-se o modelo generalizado de Maxwell. As rodelas acondicionadas nas embalagens de PP e à vácuo apresentaram valor mais elevado de dureza e maior força normalizada no equilíbrio (0,7502 e 0,7580, respectivamente) indicando que foram mais elásticas, preservando melhor a qualidade durante o armazenamento que as rodelas acondicionadas nas demais embalagens.

ABSTRACT The textural properties of minimally processed products indicate its quality, and the package is fundamental to maintain the conservation of these foods. The aim of this study was to evaluate texture alterations that occur during the storage period of minimally processed yellow Peruvian roots, using texture profile analysis (TPA) and relaxation, in function of four types of plastic packaging, combined to refrigeration. The roots were selected, sanitized, peeled and sliced. The processing continued with final sanitization, rinsing and immersion in ascorbic and citric acid solution. The slices were centrifuged and packed in expanded polystyrene trays covered with PVC film, and in high-density polyethylene bags (HDPE), polypropylene bags (PP) and multilayer polyolefin bags for vacuum, and stored at 5 ± 2 ºC and 90 ± 5% relative humidity during 12 days. For the TPA, the parameters of interest were hardness and adhesiveness, automatically calculated from the force curves (F) x time (s). For modeling the relaxation process, the generalized Maxwell model was used. The slices packed in PP and vacuum showed higher hardness and normalized force in the balance (0.7502 and 0.7580, respectively), indicating that they were more elastic, better preserving the quality during storage than slices packed in other packaging.
